How Do I Put a Reply-To: Header In an Apple Mail Message?

I have several mail accounts, but I want all replies to be sent to a separate address, independent of the account from which the message is sent. I am using macOS 10.12.1 on MacBook Pro and an iMac.

    In the Mail composition window, look for the "select visible header fields" button at the top in the toolbar. For me, it appears on the left, just to the right of the red/yellow/green buttons and the paper airplane (send) button. It looks like a list with three bullet items.
    Select that and you can choose to display a reply-to field and put whatever you want into it.
