I currently use MobileMe but do not use the sync function that much between calendars. I can’t really justify paying the subscription fee moving forward. Is there a way to transfer my mobileme emails over to gmail?

Depends on what you mean by “transfer MobileMe emails.” Do you just want an archive of your email messages? Just start using Gmail. Use both, but try to get all of your friends and co-workers to start using your Gmail address ASAP. Keep your MobileMe email around until it expires. Then archive those messages.
Does GoogleSync achieve the same thing as MobileMe. Can I sync my ical across my imac, iphone and macbook?
You should be able to. But not in the exact same way. Just try creating a sample Google calendar and syncing to those devices. See how you like it. Try it out for a while before switching to it.
I would like to transfer over all of my sub-folders that I have organized within MobileMe.
Just re-create them. Then you can drag and drop messages between them. That is much easier than trying to figure out a way to transfer them over.
