Every time I try to move my Itunes collection to a backup, the operation gets part of the way and then just stops due to some error message about one of the files. Is there a way to force Mac to just move the files while going past the occasional error?

I would just try moving everything except the large folder with the tracks in it. Then I would try copying that large one. If you get an error, it will be easy to see where the Finder left off and start copying from there. It might take a few tries, but it will be quicker than learning new Terminal skills.
I have more than 1,000 folders in Itunes.

No, really. That’s what I have. So copy them in groups of 50. It won’t take too long. And once you are done, you are done.
That’s really my best advice. You can spend a lot of time figuring out a better way, like the cp command in the Terminal, but I think just working at it is your best bet. That’s what I would do.
