Where do you see the different fonts? Different apps can have different fonts in them. So maybe they were looking at an app? Same with web sites.
Your iPhone actually has a small collection of fonts on it, and more income apps. For instance, in the Pages app you can use many.
The next time you someone with a different font on their phone ask them about it. Perhaps they are using a specific app, or maybe there is another explanation.
