I am trying to recolor some images so that they were grayscale instead of color, and I don’t want to go out of Pages to do this. Is there a way to do this in the program?

Absolutely. Well, at least for images. It won't work for PDFs.
Just bring up the Adjust Image window. Select the image in Pages. Choose View, Show Adjust Image. There is also a button for this in the toolbar when an image is selected.
Now you can adjust the colors with sliders. Bring the saturation down to nothing to make it grayscale.
