How Do I Change the Background On My iPhone To Negative?

Before I updated my iPhone software a few months ago I was able to triple click and change the background to a negative look. This was particularly useful in the ibooks app as it changed the background to black and the text to white. However, since the update I no longer seem to be able to access this function. Is it still available and if so how can I activate it?

I think what you are referring to is the "White on Black" option in the accessibility functions. It is there in iOS 5, certainly.
Go into Settings, then General, then Accessibility. Look for "White on Black" and turn it on.
But if you only want to use it in iBooks, you can turn on the "Night" theme in iBooks instead of turning your entire iPhone to "White on Black." Just tap on the AA button (font control) at the top while viewing a page in iBooks. Then tap Theme. Then choose "Night."
