Well, "Outlook" is a client mail app, like Mail on your iPhone. You don't sync it to your iPhone -- that doesn't make sense. What you sync is the email service. So if you have an Exchange server for email, you would simply go to your iPhone settings and add that Exchange account to your iPhone. Then you will get your email in the Mail app, etc.
However, if you have retired and your Exchange server is no longer something you can access, then you need to find a new email service. Lots of free options: iCloud, Gmail, etc.
When I switch over to a new email, like Gmail, how do I delete the exchange server without losing my contacts and calendar in outlook. When I tried the email switch I lost everything and had to go back to restore the outlook files. Any additional ideas would help. Thanks.
You'll need to export your contacts and calendar and import them into your new account. No way around that. If you don't have Exchange anymore then you have no real choice. Perhaps some first-hand help will be needed, depending on your level of expertise.
any idea how I sync my mail's notes function with the notes on my ipad and iphone? Ditto for my calendar. (All on Macbook)
The notes and calendar on my iPad and iPhone sync with eachother, but not my Macbook.
Which version of OS X are you using? And which version of iOS? If you are using Mountain Lion on your Mac and iOS 6 on your devices, then Notes from iOS appear in Notes (NOT Mail) on your Mac.

I don't think you can sync from Outlook to iOS. You sync from Calendar (the app, with a locally stored calendar) or from iCloud.
