Great tutorial on Custom Menu Keyboard shortcuts – but what if the command in a sub menu or sub-sub menu item. What path do you enter then?

You don't need to enter any path. Just use the exact name of the menu.
For instance, if you wanted to make a shortcut in Pages for Format, Font, Capitalization, Small Caps then just use "Small Caps" as the Menu Title in System Preferences when you create the shortcut. You don't need to worry about the path to it.
Gary - thank you. You just improved my workflow ten-fold. You rock.
