How to transfer data and software from one to another MAC?

I have got a MacBook and will buy an iMac. For this reason I would like to transfer some data and software from one to the other MAC without transferring everything.

How can I do this the easiest way? That means how can I f.e. transfer all the mailcontent, rules, folders etc., or the bookmarks from safari, 1Password, the different softwares with my changed preferences and so on.

Thank you very much for any help.
Best regards
André

You can use Migration Assistant to transfer everything, and then delete what you don't want. That's the easiest way.
Otherwise, you'll need to transfer things one-by-one, looking for the data files. Some applications you will need to simply install on the new Mac and you can't just copy the files.

Thank you a lot for your answer. The idea is, that I don not want to install rosetta on the new MAC. Therefore I think I can not just transfer everything.
Besides I would like to start new that I do not transfer a lot of unnecessary stuff, which are filling the hard disk and slowing down the speed.
