I’ve learned that Win7 shares files and folders with Mac. I want to uninstall Win7 and Parallels but am afraid I’ll lose files. I use an EHD with TimeMachine for backups. How should I do this?

Uninstalling Windows 7 and Parallels won't affect your Mac files. It will just delete the program and your Windows virtual machine and hard drive. Any files on there will be gone, but it won't reach out to your Mac file system and delete any others.
You've got your Time Machine backup anyway, just in case, right?
Parallels has good support, you can ask them for help in uninstalling too, if you are not sure of the process.
