When I use Word, Excel or Powerpoint and wish to open a file all of the files and folders are listed alphabetiCally. Can the listing be changed to kind and alphabetiCally?

The open dialog box on most applications works just like a small Finder window. You can view the files by icon grid, list view or column view. Look for the button on the top of the window and try each one.
In list view you can click on the column headings, like Date Modified, to sort the list.
