Adobe says there is a flaw in flash that could let someone takeover my computer. They also say it won’t be fixed till next week. Should I avoid sites like youtube that use flash until this is fixed?

When you ask about YouTube you are asking about the Flash video player on YouTube. That's a Flash movie created by YouTube (Google). You can feel pretty sure that Google isn't going to put that exploit in their video player. So you have nothing to fear from a site owned by a company like Google, of course.
