Is it possible to do so when adding a signature to a PDF? Or does Preview only ads signatures in black?

You can definitely change the color of your signature. The signatures themselves are just black. But once you insert it into a document, you can then change the color of that signature to anything.
Select the signature element. Then click on the line color tool at the top of Preview, or any place you are using "markup" to add signatures. It is the tool that looks like a square.
