I’m wondering if there is an iPhone/iPad that that would simply give me a list of apps installed on that particular device, and that I could choose to sort alphabetically, by genre, by date added, or date last used.

I don't think an app could do that -- it would be accessing information on the phone outside of its own space.
But what is your reason for wanting this? You can do it in iTunes with your iPhone connected to your computer easily enough.
Thanks, Gary! (And thanks for all your awesome content.) With more and more apps on my iPhone/iPad, I sometimes forget what all I have on there (even with folders, and especially when away from my computer). Scrolling through a list would give me a chance to re-discover, especially if I could just scroll through games, photo apps, etc.
@Jonathan: It's not a bad idea. A straight forward list... I can see that.
I am thinking more along the lines and shows me how large a given app is.
