When downloading updates that require the user to restart their computer, is there a way to not have the computer automatically restart. For instance if I am working on something, I don’t exactly want to have to restart my computer in the middle of things. Is there a way to download the update and have it fully take affect when I simply turn off my computer and turn it on at a later date?

You should get a prompt at some point. It won't automatically restart without your permission.
When you get that prompt, simply choose the option to not restart at that moment. In some cases this may put off installing the update, but it may download.
