Can you bounce e-mail in Lion

Yes, it was removed. Probably because most spammers (90%+) wouldn't be using a real from or reply-to email address anyway. And some used false ones of innocent people who would find their inboxes filled with bounces.
That sucks; it was the best feature in Mail. Lion sucks
I agree
I think bounce should be replaced with some kind of "hunt down the originator of this message, and make their life miserable" feature. But lacking that, it was very satisfying to be able to bounce messages occasionally. Now we have nothing; if you reply with a cease and desist request, your message is likely to be returned as undeliverable. sigh. Even if it's pointless, please give us back our bouncer.
Use the feedback link in you mail and tell Apple. I did
I too only occasionally used the Bounce feature. But, when I did, it was helpful. Hopefully, Apple will restore it (or a similar feature) in a future update of Lion Mail. Even if it did not work all the time in getting messages back to the originators, there was at least a certain amount of satisfaction that I had tried.
I found some very simple instructions on restoring the function here.

The feature of “bouncing messages back to sender” is gone! Now it is back !

Keep in mind that it is not a GOOD thing to use this. Spammers won't get your bounce. But an email using a fake (someone else's) email address would mean that it would simply bounce and clutter up the inbox of someone else just like you.
at least that unsuspecting person will know someone is messing with their account and change their password.
That's not the case. Almost all of the time this is because someone is just putting a random email address in the "from" field -- they have no access to that email account, they are just faking it. It is easy to do.
