Gary, I have an iPad Air I want to replace with a new iPad Pro. I regularly backup the iPad Air to my iMac. I have a variety of games and other apps on the iPad Air now, and importantly, GoodReader. Can I use the iPad Air backup (stored on the iMac) to set up the new iPad Pro? In effect, can I set up the new device with all that I have on the old device? I mention GoodReader, since it has been used as a method for me to retain a wide variety of documents.

Yes, that's the normal way to do it. When you get your new iPad and set it up, it will ask you if you want to "restore" from a backup. Make sure you have just backed up your old iPad to your Mac. Then connect your new iPad to your Mac when asked. It will then read all of the old data from your backup and make your new iPad pick up where you old iPad left off.
Most apps buy into this system. I can't be 100% sure that GoodReader does, but it probably does. This means you'll see all of your old documents and settings on your new iPad after you are done setting it up with the restore option.
