I often use clipboard to move text between documents, is there a memory in clipboard where it stores say the last 5 or 10 clips for use later?

This isn’t built into macOS, but there are a plethora of “Clipboard Managers” available for you to add to your Mac. I couldn’t live without one.
Search the Mac App Store for that term. Most are very cheap or free. In the past I have used JumpCut and ClipMenu. I am currently using CloudClip too. But perhaps you will find one that has features to better fit your needs.
