I would like to know how I can save or print the texts and pics sent to me as text messages on my iPhone. I would like to save/print them as a journal type keepsake.

You can save any image you get in the Messages app to your Photos library on your iPhone. Just tap and hold the image. If you have a newer iPhone, just tap and hold, don't 3D Touch (forceful press).
Then you'll get the option to Copy or Save the image. Save it and then you can see it in your Photos app and use it as you would any other photo, such as ones you take with the camera. So you can use them in journaling apps, Pages, etc.
If you Copy the photo instead, you can then paste it into any app that supports pasting photos. I would imagine a journaling app would support pasting. If you want to print them, you can do so from the Photos app and many others.
You can also tap on the "i" button at the top of any conversation to enter the Details mode. This will include a list of all recent images. You can tap and hold here too and get Copy and Save options. The Save may be under the "More..." option.
As for text, you can do something similar. Tap and hold the text of a message and you can copy it. Then you can paste it into another app as text.
There is a trick you can use to get the text of more than one message at a time. Tap and hold, then tap the More... button. Then select the messages you want by tapping on the circles to the left. Then use the Share button at the bottom (curved arrow) and it puts the messages together into a sharing interface. Just select and copy the text in there and paste it to another app.
This was pretty confusing to me. I tried the trick in the last paragraph about 3 times, selecting each comment in a chain in my "messages" from someone and sent it to myself, but it never got to me. It would be easier if I could see a video of you doing this as I must be missing something. Thanks
Patty: Don't send the message. Just select them and when you have them all shown as one new message, copy it and paste it into another app.
Is there a way to automatically capture and store any media from the messages app to free up space on my iPhone?
Leo: No automatic way I can think of. But you can do it manually in the Messages app on your Mac. Just click the Details button, look in that window for the Photos. Command+A works to select them all. Drag and drop them all into a Folder in the Finder. Then Control+Click and Delete key to delete those photos, though it took a quit and restart of Messages for me to see that change. But the photos remained on my iPhone so you'll have to delete them there (similar process) too. Or, just delete the whole conversation.
If I delete the, from the messages on my iOS devices (iPad mini 4 and iPhone 6). Will they also delete on my MacBook Air since I have the handoff/ sync between devices on?
Leo: Unfortunately, no. They don't for me. So you have to do it on all devices. That is why it is so much easier to save them all (if you really need to) on your Mac, and then just delete the conversation.
