I don’t like the default font for emails and I want to pick one that I like and make it the default font. I have El Capitan.

You can do this by going to Mail, Preferences. Then click on Fonts & Colors. Then Click on the Select button next to "Message font."
However, there is something you need to be aware of. If you pick a font that the receiver doesn't have on their computer or device, then they won't see the text in that font. It will most likely default to the standard font used by their email application.
I tried to do that with Helvetica Neue light italic, it just defaults to Helvetica, no light, no italic.
Raiford: Try another, more standard font, like Times or Vendana just to see if that works.
