I’ve created a few custom stations on Apple Music but can’t seem to find them other than recently played. Anyone know if they show up under “my stations” anywhere? Thanks in advance for any help

I don't think they appear anywhere else except the "Recently Played" section you mention in Listen Now.
On the one hand, I think they are intended to be temporary. So if I create a station "based on" George Harrison, and I wanted that again some time later. I would just create it again.
On the other hand, you can save them. In Recently Played, click on the three-dots button and share the station. You can copy a link and save that link somewhere, maybe as a bookmark in Safari or just a link in Notes. Or, you can share directly Notes or Reminders to put the link there. So you could have a Note that lists the stations you want to reuse again.
