I own an Apple MacBook Pro, iPad and Watch. When I get a text that I view on any of these devices and maybe even delete it after reading, the other 2 devices show not only that they still exist, but that they haven’t been read. It’s like the old “Pop” email days where one had to delete the same mail message on every device. Am I the only one experiencing this problem or maybe there’s a setting that I don’t know about.

You want to use "Messages in iCloud" for that. It keeps your Messages apps in sync.
In the Messages app on your Mac, go to Messages, Preferences. Click on iMessage at the top. Then turn on Enable Messages in iCloud.
On your iPad, go to Settings, tap your Apple ID icon at the top of the left sidebar, tap iCloud, turn on Messages.
Not sure how you would turn this on for the Apple Watch if you don't have an iPhone though. Normally it would just follow the iPhone setting, I think.
