I am on my MacBook Pro browsing and writing emails in Gmail. My wife is on my iPad writing emails in Apple Mail. As she cuts and pastes it appears on my Mac. How can I disable it? I suspect if she signed out of iCloud it might work but I prefer not to do that.

It sounds like you are sharing one iCloud account with two people. You should each have your own Apple ID, and thus your own iCloud account.
Or, is it that you both have your own accounts, but she is borrowing your iPad? If so, there's not much you can do about that. The email she'd be sending would be coming from "you" too.
As a temporary fix, you can disable Handoff in System Preferences, General. But there will still be a lot of other issues as everything from email to bookmarks to documents are set up for one iCloud account = one person.
