At that point in the printing process, the dialog boxes you see are from the system, not Page. So you can set a default printer for your macOS system. You can get to that in System Preferences, Printers & Scanners. Or, when you go to print from Pages, or anything, you can choose the printer and look for the Printers & Scanners Preferences option. That takes you to the same place.
Then you can add or remove printers from the left. There is also a Default Printer selection at the bottom.
Hi Gary, I did as you said but every time I want to print from Pages the print option comes up with the Brother label printer instead of the required Canon. I don't understand why a PDF print always comes up standard with the Canon (as required) but it seems not possible with Pages.
Loek: So you are setting your default printer to the Canon and yet the other one still shows up as selected each time you print? Maybe try removing the Brother entirely. Then add it back again after printing with the Canon once. I'm not sure what you mean by "why a PDF print always comes up standard with the Canon (as required) but it seems not possible with Pages." What do you mean by that?
