I am trying to hide the toolbar in the application TextEdit and I can’t seem to figure out how. There is not a menu bar command for this as far as I can tell and I don’t remember what I did before to get it to hide itself.

I have limited screen real estate on my laptop and I want to make TextEdit as small as possible for writing quick notes.

If you wish to create rich text documents in TextEdit, you can't remove the toolbar. There is no option for that.
However, if you just want to create plain text documents, then you can. Plain Text documents have no toolbar. Since you said you want to write "quick notes" maybe this is what you really want anyway.
To convert a rich text document to plain text, choose Format, Make Plain Text. In TextEdit, Preferences, New Document you can set the default document type to Plain Text.
You may also want to look into using Notes instead of TextEdit if your goal is to create "quick notes." That's exactly what that app is for.
