How do I remove a Calendar, or individual items from a calendar from my iPhone. Many of the listings that have no interest to me whatsoever appear to be “baked-in” and they are quite distracting. I’ve tried deleting them but nothing I’ve tried so far seems to work.

Do you mean a calendar you are subscribed to? You can't delete individual items from that, since it isn't your calendar, you are just receiving the events. But you can unsubscribe to the whole calendar. Tap the Calendars button at the bottom of the screen in the app. Then scroll down and look for the calendar you want to remove.
You can tap the checkmark to the left of it to simply hide those events. Or tap the i button next to each item and then scroll to the bottom to delete the calendar.
If you mean the Holiday calendar for your country, then you have that automatically and can't remove it. It is tied to the location setting for your iPhone.
But you can still uncheck it to hide all of the items. However, it can be useful to know what the people around you (at work, school, organizations, etc) are observing even if it is not a holiday you are personally interested in.
