It is probably behind another window. Try moving the windows around to reveal it. Or, hide everything except the Finder, then move all of the other Finder windows away, or close them, to reveal it. Otherwise, the progress window shouldn't disappear until the copy is complete.
I'm having the same issue on Monterey. Now whenever I copy a file to another drive (and not small files, the last one I copied is of 40 GB) no progress window appears... and there is only the Finder, two small windows for the source and the destination (and I moved them, etc.).
The copy progress window disappeared!!!!
Open Finder, click Window in your top menu bar, click Show Progress Window. You should be back to normal.

I had the same issue because I accidentally closed it when I thought I was closing another window with a keyboard shortcut. So thanks also to Bill because I thought it should be something like that.
My iMac, about 11 years old, doesn't have Show Progress Window among the selections. I see that in the menu bar on my MacBook. Is there another way to find it on an older Mac?
Steve: The progress bar for copying files has been around since the beginning. You should see it. Maybe it is behind another window, or the copy is simply done?
