I would like to switch back to Safari as my default browser. That being said, I have become very comfortable and happy with Firefox’s New Tab page that shows thumbnails of recent sites that I use most often and is a very fast way to get to them. I would like to make a similar start page in Safari, but cannot figure out a way how.

Safari has done this for a long time. It is called Top Sites.
Go to Safari, Preferences. Go to the General tab. Look for "New windows open with" and "New tabs open with" and change either of them to "Top Sites."
Now when you open a new window or tab, you get Top Sites, which is a grid of previews of those sites, just like Firefox's home page feature.
There is also a setting in General further down for the number of previews to be shown: 6, 12 or 24.
