Pages takes so long to open a new page that I resort to using TextEdit instead.
I have a 2015 iMac using Catalina OS 10.15.5.

The solution for that is to never shut down in the first place. There's no reason to shut down your Mac unless you are storing it for a long period of time, or moving a desktop Mac. Instead, let it sleep. Close the lid if it is a MacBook model. Then wake it up when you want to use it.
