I am transitioning from MS Word and Excel to Mac Pages and Numbers because soon the former will no longer be optimized. I have lots of .docx and .xlsx files. Do I need to re-create all new files, worksheets, templates, etc to .pages and .numbers? Or is there an easier way? Thx!

What do you mean by "soon the former will no longer be optimized?" Are you using older versions of Word and Excel that are 32-bit, so they won't work on macOS Catalina? If so, all you need to do to keep using Word and Excel is to upgrade to a more recent version of those apps.

Other than that, it is up to you how you handle a transition to Pages and Numbers apps. You can open old Word and Excel files in Pages and Numbers, but since these are different apps with different capabilities, the translation won't be perfect. Try it and see right now.
It is hard to advise as it depends on how you work and what you are trying to accomplish.
Once you open the Word document in Pages, you must save it in Pages. Once you open the Excel document in Numbers, you must save it in Numbers. Garry forgot to tell you that.
