Your best bet is to just do nothing. Ignore it. Then it is there and ready to go when you want to update.

If you really want to get rid of it for some reason, you can do it one of two ways. The first is to simply accept the download. Then leave the download there, don't run it until you are ready. You can wait weeks or months.

The second is to use the Terminal. This command will do it:
    sudo softwareupdate --ignore "macOS Catalina"

Then when you are ready to update, you'll need to do:
    sudo softwareupdate --reset-ignored

Can i not just choose to uncheck the automatic update box?

Edward: That is for updates like from 10.15.1 to 10.15.2. It won't take away the notification that a major new update is available. And you want to make sure you get minor updates, especially since they contain security and bug fixes.
