I need to get Mac Mail out of service. I tried following the directions in the manual but it still collects incoming mail. I had sonic.net running with Apple Mail at the same time. Now I just want to use sonic because that is where I have my domain hosted. My computer is a Mac Mini running Big Sur 11.5.2 Delete MacMail how?

The Mail app come with macOS. Don't uninstall the Mail app. Just stop using it if you don't want to use it.
You can go into Mail, Preferences, Accounts, and for each account you have set up, simply go to the Account Information section and uncheck "Enable this account." Then Mail won't be checking for anything.
Then just ignore it.
