Our family has two iMacs, each with own itunes account. Will we be able update both iMacs with one Lion download? If not, how do I change the itunes account on one of the iMacs to match that of the other?

It isn't the iTunes account that matters, it is the Mac App Store account. They can be the same, but I think they can be different too. Go to your Mac App Store settings for each and set them to the same account (choose a master one, I guess) and then you should be set.
Otherwise, you can always call Apple and have them combine your two accounts. They have to do that on the phone, however.
