In macOS Tahoe, how do we change the font color to black and turn off the background colors? This change is the most annoying and disappointing thing Apple has done since I switched umpteen years ago. The issues is readability and most importantly, when you copy, say an address to Pages, you can not see a white font on a white sheet! Pretty basic. Result is extra steps etc.
Thanks for all you do and your great resource of knowledge. I have filed recommendations with Apple and no word and no change.

There's currently no way to turn off the background color in Contacts. The color comes from the photo/memoji/emoji/monogram you use as a picture for the contact. So depending on what you select, that sets the background color.
But it is always some color, and always just dark enough so the text is white. There is no way to force the text to be black. But you can choose colors for the image that work better for you with the white text for readability. So if you see a contact with a light beige background and the white text is hard to read, then consider changing that contact's image to something else that will result in a darker color.
But if you really want black text, you can do it. Go into System Settings, Accessibility, Display, and switch on Reduce Transparency, then the color of the text in Contacts changes to black.
Also note that if you click Edit while viewing a contact, then the text is mostly black as well.
As for copying and pasting into things like Pages, you probably don't want the font, size or anything about the contact information text you copied. So choose Edit, Paste and Match Style instead of Edit, Paste. This will take the plain text without the color and paste it into your document using the color and style you are currently typing with.
