How Do I Create a Color Scale In Numbers Like I Can In Excel and Google Sheets?

I am trying to create a colour scale on Numbers like I can on excel or google sheets.

Example:
I have the percentiles 0% to 100% in a column. I want to create a scale where the colours go from different shades of pink (0%) to different shades of blue up to 100%.

    You would do that with Conditional Highlighting. See https://macmost.com/conditional-highlighting-in-numbers.html

    But there isn't any automatic way to use a scale. You'd need to set up 3 or 4 conditional highlights (or more) for value ranges. But once you set it up for a cell, you should be able copy and paste it using Format, Copy Style and Format, Paste Style.

    Definitely not as good as what you can do in Excel or Google Sheets though.
