I want to create different calendars for different issues ie bookings on a Air B/B property which is not clutrered with other recurring events , birthdays etc

Go to File, New Calendar. It will appear in the left sidebar. Then name your new calendar. When you add a new event, you can choose which calendar it belongs to.
Now use the sidebar to control which calendars you see at any one time. So at times you may want to hide all of the other calendars and just see your special bookings calendar. At other times you may want to hide that calendar and see the others you have. Sometimes you may want to see them all.
