I have a difficult time setting the insertion point in a formula when the insertion point is on either side of a “(” or “)” because it is difficult to clearly see the parenthesis (they are so light). I know I can change the formula to show as text but I prefer to use the original cell editing display except for the above mentioned difficulty. Any ideas to help here?

I know it can be hard. I have trouble when I make my tutorials to zoom in to show the small text in the videos.
One idea is to use the Zoom feature in Accessibility. https://macmost.com/how-to-use-mac-screen-zoom.html
It is easy to turn on an off quickly so you can zoom in to see something like this.
