How do I view the full header of an email received and discover what email address it really came from using Apple Mail 10.3?

I'm using 11.2, but I don't think it has changed. You can choose View, Message, All Headers or View, Message, Raw Source. Either should get you what you want, at least as far as headers go.

However, there is no guarantee that the actual "from" email address will be included in the headers. And, even if it is, it can easily be faked. In this way email is no different than physical mail. Sure, there is a return address on a physical letter, but someone can easily write something else in that space.
