The short answer is: you can't.
The user folder is named after the user account. That "short name" of the user account is entwined in that account in many ways. So changing it isn't allowed.
If you really want to change it, the way to do it is to create a new account. Then move all your data to the new account. Files, email, etc. Basically copy everything from your user folder from one to the other. Get that set up the way you want it and working. Leave the old account there, but plan to delete it days or months later when you are sure everything is working OK.
It isn't a perfect solution, as if you have been using this account for a long time then many more things may be tied to that short name. So there may be some bumps in the road.
