The easiest way is to probably bring up the Emoji keyboard on the screen and use that. After all, you need some way to view the emoji and select one.
If there are specific emoji you use all the time, and want a way to enter those by typing, you can always add them to Settings, General, Keyboard, Text Replacement. So, for instance, you can add a 😀 as "emsmile" and then when you type "emsmile" it will be replaced with that emoji. Add as many as you like to suit your needs.

Kueck: You never mentioned what sort of wireless keyboard you are using. But if it is an Apple one, I believe you press the "eject" button at the top right to bring up the virtual keyboard and then the FN key switches between them. If you are using another keyboard, experiment.
