Is It True That Catalina Is Not Compatible To a 2011 Mac Book Pro?

The last time I spoke to Apple Care I was advised that my MacBook Pro 2011 would not be compatible. I am using Sierra.

That's correct. Apple has the list of compatible Macs here: https://www.apple.com/macos/catalina/ It is near the bottom of the page.
MacBook Pros from earlier than 2012 weren't compatible with Mojave either. But you should be able to upgrade to High Sierra.

I upgraded my MBP 15” mid2010 to HighSierra and, even that I upgrade with SSD, the MBP is extremely lag. Should I return to Sierra? Will I lose a lot of notes or iCloud photos integration because my iPhone is on ios13?
    Thanks

Marçal: I don't see how returning to an older OS will help the speed. Probably the opposite. Plus, you will lose features too.

How do I get Catalina on a mid 2010 Mac Pro ? App Store says "not available." I am running OS Mojave 10.14.6, Metal is supported, 2 x 2.4 GHz quad core Xenon, 32 GB Ram.

Joe: That model is not supported. See https://www.apple.com/macos/catalina/ toward the bottom.
