My Lion version of Automator doesn’t seem to reference any iOS interactions. I’m wondering if you see control of iPhone and iPad in Automator’s future? Or, do you know of any third-party apps that allow scripting of iPad actions on the Mac?

Automator doesn't really extend to controlling external devices of any kind. I don't see a change in that.
What, exactly, are you trying to do? I'm thinking about it, and I can't imagine what you would use Automator for in controlling an iOS device that is connected to a Mac.
It's more just the fun of fooling around with Automator in different ways than having a practical need. One thing I'd maybe like to try is a homemade, surefire, reliable way to sync from iTunes to the iPhone or iPad. I don't know what it is about how I have things set up, but when I simply want to manually sync, say, my audiobooks, I end up syncing the kitchen sink. Anyway, more curiosity than real need.
I've just sent feedback to Apple to request automator action based on location. This would build upon the Location Reminders coming tomorrow in iOS 5. I would use this to turn off WiFi when entering a defined area.
