How Do I Create Invoice In Numbers?

I know there are templates, but i can’t find a way to automatically store the data after filling the invoice.
For example after filling an invoice i want to press, write or check something so the data (name, date, item, etc) gets saved in another sheet then it clears out for a new input.

    You've got it backwards. What you want to do is to create a way to store data first, and then a sheet that acts as an invoice "printout" for the current items. So have a sheet that is your database with name, date, item, etc for each billable item on each row. Then a second sheet that is something you can print (as a PDF) that can look nice and show the client what they owe.

    I have an example of such a system here: Creating a Billing and Invoicing System In Numbers. It may not be exactly what you want, but it will hopefully get you started.

    Otherwise, you may want to look for custom accounting software. I don't know what industry you are in, but most have software (online services usually) that will work better than a spreadsheet to fit your needs.
