I am trying to have siri set a reminder with it’s priority at the same time. It doesn’t seem to like my syntax and I can’t find it anywhere on the web. Is it possible? “Hey Siri, remind me to call the repair place as priority 3” or something like that?

It doesn't look like you can. I tried a variety of things and they didn't work. Then I noticed that even in Shortcuts you can't set the priority of a reminder with a script. So they must not have added priorities to the connection between Siri and Reminders.
So you'll just have to set the priority of the Reminder in the Reminders app after you create the Reminder.
