I do know that Mac (Photos, specifically) can insert the date on photos to indicate the date the photo was taken. Could you please tell me how to do this. I’ve done it before at someone’s instruction quite some time ago, but I don’t remember how. btw, tysm for your videos and even this question site. It won’t be the last time I use it :) Thanks so much.
I have photos that I intend to use in a legal matter that I need to put the date on to prove the date of the matter in the photo.

You can get information about the photo to see the date. If it is in the Photos app, just select the photo and use Window, Info to view the metadata for the photo.
If the photo is a file, you can double-click it to open it in Preview and then use Tools, Show Inspector to see the date there.
But if you want to put the date ON the photo, like it is embedded in the pixels, then you have to do that manually with either a photo editing app (Photoshop, Pixelmator, Acorn, Affinity Photo, etc) or you can do it in Preview with the markup tools or in Photos with the markup tools.

Both of these videos are a few years old, so the buttons and menus aren't exactly the same, but these should get you there.
Note that since you are just putting what you want on the photo, it really doesn't prove much in a legal sense. Digital files can be manipulated to be pretty much anything. Even those dates that are part of the file can be changed if you know how. But I'm not a lawyer so I'll leave that part up to you to figure out.
I realize that the "Mark up" way works, but I am specifically referring to NOT having to type it manually that way, i.e. clicking on Window and Info gives me the exact info I need on the photo, even with the time the photo was taken. There is something that can be clicked on to put this info directly on the photo without manually having to type it in/copy it via Markup. This is how I did it before, with 1 click, but I forget because it's been so long. Can you pls direct me in this regard. ty.
Gail: There's no way to do it with 1 click, sorry. You can always "print" those photos and choose the date as the information that appears next to each photo. Then you end up with a PDF.
Go to the photo app, select one photo, click 'image' in top menu and then select 'adjust date and time'. A small size picture of your photo will appear with the original date and a time (that cannot be changed) and a time zone (that can be changed). Then press 'Command Shift 4' and select the image and voila you have something that may be acceptable for your claim.
Gary: lots of info on how to change the actual date taken. I'm looking for a way to list multiple files by actual date taken, like in a finder window. Apparently Apple doesn't think it is important enough to include in any of their search options. Any recommendations on app or software that might do this.

Jim: In the Finder, do a search. Then add "Other" as a search criteria and then use Created Date as the attribute.
