Go to Mail, Preferences, Signatures. Then add as many as you like. If you have more than one email account set up, make sure you assign the right ones to the right accounts, or to all of them. That is done with drag and drop.
Once you have all the signatures you want, you can set the default right there. Select the account on the left and then "Choose signature" at the bottom. You can set it to a specific default or a random one.
Either way, you can change it with each email. When you compose an email message you'll see a signature pull-down menu on the right of the composition message. You can select any one you want.

I did all that and watched the video before I came for help. My problem is the "Choose Signature" box remains grayed out, so I can't select.

Have you selected an account on the left? If you simply select "All Signatures" then the button would be grayed out as it is for assigning a default signature to an account.

Gary, I am not sure you addressed, and I can not figure how I can use my own cursive handwriting as a signature on my emails. Via help in mail I see how I could do it every time by using pdf markup, but I want to leave a signature in my folder.

That's actually really tough to do. You basically need to create an image file with your signature, then copy and paste that image file into your email where you want it. You could copy and paste that into a signature too, so it will appear automatically.
However -- and this is a big however -- you don't know what the recipient on the other end will see. There is no standard when it comes to viewing email. They could be viewing your message on a Mac, PC, various apps on both platforms, web-based email like Gmail, Yahoo, or ISP web email, mobile phone apps or browsers, etc. Some of those will display your signature image right where you put it. Others will put it at the end or screw up the formatting. Others won't show it at all by instead just show it as an attachment.
Plus, isn't it annoying to get an email with an attachment and then to just see that the attachment is cosmetic -- a company logo or signature like you want? I find it annoying, anyway.
So you can do it easily, but you might not get the results you want. I urge you to think about it before doing it. Make sure you have a good reason.
