How do you print booklets with Pages or something else in OS X?

One of the (only) nice features of MS Word for Windows is the ability to print booklets by using a half pages template (5.5 x 8.5). I cannot for the life of me figure out how to do this in either Pages or Word for Mac. Any ideas?

Pages would be the perfect thing to use. There are some examples in the Template Chooser under "Brochures"
I'm sure there are a few ways to do it.

That only works with like 2 page documents. It doesn't have a booklet function, so won't work with documents that are more than two pages long.

I'm sure there are many ways to do it. Have you tried setting the page size to the page of one of the booklet pages, and then looking for printing options to print two per page? I've just never explored this part of Pages, but I'm sure it can be done.
