Just wondering if you could explain the difference between “swim proof” and “water resistant at the molecular level”? And is the water resistance of the new iPhones different than the water resistance of the iPhone 7 or 7+?

I can answer the second question for you, at least. The models are probably the same. In the "tech specs" for the iPhone 8 and 8 Plus, under "Splash, Water, and Dust Resistant" it says "Rated IP67 under IEC standard 60529." That is exactly the same as for the iPhone 7 and 7 Plus. So at least with the specs it is the same. Whether there are differences within that range, I don't know.
A footnote on that page states: "iPhone 8 and iPhone 8 Plus are splash, water, and dust resistant and were tested under controlled laboratory conditions with a rating of IP67 under IEC standard 60529. Splash, water, and dust resistance are not permanent conditions and resistance might decrease as a result of normal wear. Do not attempt to charge a wet iPhone; refer to the user guide for cleaning and drying instructions. Liquid damage not covered under warranty."
As for the first question, Apple has a page on that. https://support.apple.com/en-us/HT207043. You can search for "iphone waterproof details" and come up with further analysis, and some people that do some tests too.
If you are really curious, you may need to seek out an expert, such as an engineer who specializes in this kind of thing.
