Any strong arguments for the 3G version over the plain wifi?
Any, how much room does an movie or book take up? Games?
I’ve got a good handle on how much photos/music/normal apps will take. Most docs I’d access would be out on Dropbox, so documents are not a space issue.

The choice should be pretty clear between 3G and Wifi-only. If you need to use your iPad on the go and get good AT&T coverage, then 3G. Otherwise, Wifi.
As for space, documents won't take up much. Movies can be 1 or 2 GB. But how many movies do you want to have on the iPad at once?
Wouldn't use it TOO much for on the go. Maybe for a trip here or there. But even then, wouldn't be surfing the web all that much. More likely to use the 3G to access Dropbox. Okay (security-wise) to use hotel wifi on iPad to gain access to Dropbox?
Maybe 3-4 movies, 2-5 books, 1GB of photos, 10GB of music, maybe a couple games. Not worried about a ton of apps.
If you've got 10GB of music, then probably look at the 32GB at least.
As for accessing Dropbox via public wifi. I think Dropbox is secure/encrypted. Check their website for details on that.
In other words, 32GB is a definite. It's just down to the wifi or 3G.
