In previous versions of iTunes it was possible to display bitrate, size etc.
Is it completely impossible with the new iTunes ?

Yes, it works the same way. I assume you want to list the bit rate in a list view, correct?
Just go to your Music library. Then switch to Song view at the top. Then select View, View Options. In the view options dialog, check Bit Rate, Size, etc under the "File" category.
If you don't mean in list view, but just want the data for a single song, it is also the same as in iTunes 10. Select the song, choose File, Get Info, and then you can see all of that in the Summary tab.
